Nothing says “I Love You” like Red Velvet and … Ginger?!

When I moved to DC, I found a world outside of NYC, my hometown, that is filled with love, loving people, lovable monuments, and lots of things that I love. I found a great job at a great organization with some great people including a great (and newly engaged) boss. This weekend Grassroots Gourmet helped celebrate the engagement of that wonderful man to his partner with their favorite cupcake flavors, Red Velvet and Ginger.

Red Velvet, we had in the bag. Ginger, well that was a different story. Sara and I both like ginger, we just didn’t have it on the menu yet. During our weekly (ok, daily) conversations about my favorite topic, flavors and flavor combinations, ginger was a recurring subject. This engagement party was just the push we needed to perfect our visions of ginger. After a bit of research we had at least three viable ginger recipe options pieced together focusing on fresh ginger, not spice cakes. Planning, discussion and research done, back to the kitchen it was! Magically, the first recipe Sara tried was *the one*. And with ginger three ways, how could it not be? The result is a deliciously adorable, bite-sized, light ginger cupcake with ginger 3 ways: fresh, candied and ground. As if that wasn’t good enough, it’s finished with a citrus icing and a candied ginger topping.

When the couple arrived at the venue on Saturday evening, we handed them their favorite cupcakes and watched as they disappeared in one bite. The smiles spread over their faces. Now we are confident that this ginger recipe really is the one.
